No doubt you’re familiar, my subcontinental pals, with pheyoni katlamma. Hard to describe but try I shall. It’s a hundred-coiled paratha, made by trickling batter in hot oil and deep fried to a pale caramel color. Soaked in sweet tea, spooned onto the tongue as aromas of salted desi ghee create a fleeting glimpse of a culinary heaven, it is enough to last a day of full satiation.
